Coconut Lime Macaroons

The above is a photograph of Coconut Lime Macaroons I made improvising on a Young Living recipe.

Here’s my version of their Dairy-Free Coconut Lime Macaroons

Ingredients

12 oz. shredded unsweetened coconut flakes

1 can organic unsweetened coconut milk

1 tablespoon fresh lime juice

Pinch of Himalayan sea salt

1 pastured egg, including yolk

8 drops Lime Vitality essential oil

4 drops Bergamot Vitality essential oil

Directions

Preheat oven to 325F.

In a large bowl, combine shredded coconut, condensed coconut milk, and lime juice. Mix well.

In a separate bowl, beat egg with a pinch of sea salt. Add Lime Vitality and Bergamot Vitality. Then stir into the coconut mixture. Mix well.

Pour batter into cupcake pan. The batter makes 18.

Bake 20 minutes. Macaroons will be lightly browned.

Happy National Spicy Guacamole Day!

Today is National SPICY Guacamole Day. Wanna celebrate? I got you covered. This has been my “go to” party dish for years. I found this recipe on a raw food message board over 10 years ago. It’s very simple.

To make a small serving, blend one avocado, one banana and one clove of garlic. Yes, garlic — that’s what gives it the spicy kick! I’ve had someone tell me, “This is the best guacamole I’ve ever had!”

This recipe is not only good as a party dish, but great to pour over greens when you’re seeking something different in a dressing. It comes out thick and creamy. The fat in avocado is so good for you, I have one every day.

This recipe is suitable for paleo minded as well as vegans and raw foodists.

Recipe: Honey-Peanut Butter Cocoa Mousse

I found this great recipe in “First for Women” magazine, but this is my slight variation.

Honey-Peanut Butter Cocoa Mousse

1 TB honey

1 pkg.  tofu, drained

2 TB unsweetened cocoa powder

2 TB peanut butter

Puree in a high speed blender, adding spring water to desired consistency.

Makes four servings (two if you have an Italian appetite like I do!)

SIDE NOTE: Since this “treat” is jam-packed with protein, I’d even say it’s good as a meal!
