Happy National Spicy Guacamole Day!

Today is National SPICY Guacamole Day. Wanna celebrate? I got you covered. This has been my “go to” party dish for years. I found this recipe on a raw food message board over 10 years ago. It’s very simple.

To make a small serving, blend one avocado, one banana and one clove of garlic. Yes, garlic — that’s what gives it the spicy kick! I’ve had someone tell me, “This is the best guacamole I’ve ever had!”

This recipe is not only good as a party dish, but great to pour over greens when you’re seeking something different in a dressing. It comes out thick and creamy. The fat in avocado is so good for you, I have one every day.

This recipe is suitable for paleo minded as well as vegans and raw foodists.

Indian Summer in New Jersey

It was the most gorgeous Indian Summer day in New Jersey today, so my husband and I enjoyed it to the max!

First we had lunch at Cave Paleo in Avon-by-the-Sea. We had coconut pumpkin soup and flank-steak “burritos” (lettuce as the “burrito.”)

Then we spent two hours on the beach; I had a good book and the time just flew by.

And finally hit a record store.

Life is good!

Sunday Happies!

SAM_5883It’s Sunday and I’m ready to hit the road with my hubby!

Another gorgeous Sunday in New Jersey.

I was thrilled to finally be able to grab a bite at Cave in Avon-by-the-Sea. It’s a paleo restaurant. I’ve been eating paleo for a few months now and my body loves it! I had grass-fed beef chili, with avocado and a bullet-proof coffee for dessert. The place was cute and cozy and service was excellent!

This dish was so heavenly. It took me back to my Girl Scout days when I had a dish called “Sloppy Joe.”

Bullet Proof coffee is organic coffee made in a blender with coconut oil and grass-fed butter. Your body will love the healthy fats that give you great energy without the caffeine  jitters! Something about the mixture just does a body good! I serve it to my husband in bed. I also make a great oolong tea version with unsweetened cocoa — it’s killer!

After Cave, we cruised along the beach and then visited a friend. A lovely full day with perfect weather!

When diabetes and heart disease runs in your family and you do your absolute BEST to be in good health, I am super proud to say, according to the Competitive Edge BC-1000plus scale, my metabolic age is 28 (and I’ll be 51 next week!)

Several months ago I took a slow plunge into the paleo lifestyle. It’s the best thing I ever did for my health, though a nutritionist told me that my metabolic age is because of what I’ve been doing all along, that it wouldn’t get that great in such a short time. Though I feel amazing on paleo, I attribute my good health to three things: 1. Having a great husband and great friends; 2. regular exercise; and 3. avoiding processed foods as much as possible (especially in the past two months).

Earlier this year, I felt I was doing something wrong because I was getting sluggish. I could have chalked it up to age, but I wasn’t ready to be a couch potato. I also had some minor things that seemed to be pre-menopause related, like headaches and dizzy spells.

I spoke to three different nutritionists and after extensive research I decided paleo was the way to go. “Paleo Manifesto” by John Durant was one of the books that greatly inspired me because it covered so much ground and answered many questions for me.

So, the way I eased into paleo. It started around spring time of this year. First I gave up gluten. About a month later I gave up grains. Then by June I was eating nearly almost a paleo diet and I’m now 100 percent (with the exception of the xanthan gum in that stupid hot sauce I used today, it tasted lousy after not consuming it for so long! And no, Whole Foods didn’t have Frank’s in their dining area!)

I can honestly say it’s been months since I’ve had dizzy spells and headaches. And best of all, I had some minor arthritic pain that is slowly, but surely subsiding. I feel fantastic! What’s really cool is I’m eating less natural sugars as well. I’m down to two servings of fruit per day. And when I eat bananas I only eat a half.  Since I shared my story, several people have come to me and said they have less pain since being on paleo! I even started a community on Face Book called “Hey Ho, Let’s Paleo!”

Mind you, if you decide to take the step into paleo, you may have a transition stage where you need a lot of sleep and maybe get some pimple break outs (yes, at 50 I’m getting them). Just think, you’re eliminating garbage foods and putting nothing but good stuff in your body, so it’s gotta cleanse.

For me, while my diet wasn’t bad at all, my downfalls were chips, “natural” cookies and SOY — the most processed food! To give up that stuff and just concentrate on REAL food: seaweed salads, fermented foods, grass-fed beef, pastured eggs and chicken, wild caught fish and a variety of fresh organic vegetables, while limiting fruit to two servings per day.

Then the FUN part — healthy fats: Kerry Gold butter, avocados, coconut oil and sweet potatoes. And a concoction called Bullet Proof tea that helps assist in intermittent fasting. My version is: oolong, Kerry Gold butter, raw extra virgin coconut oil and unsweetened cocoa — blend then sprinkle with cinnamon! It tastes like hot chocolate!)

I eat all this stuff and keep my weight down. In fact, I even lost a few pounds! It’s really hard to gain weight while eating like this because you’re not putting anything bad into your body.

Paleo/Vegetarian Avocado Kale Slaw

I’ve been eating a vegetarian version of paleo for about two weeks now. I can’t do enough to rave about this lifestyle. It’s easier than raw. I feel full and satisfied. My blood sugar doesn’t drop and best of all, I can eat all I want without gaining weight (note, I do work out every day, 10 to 40 minutes). But what really amazes me about eating this way is how super soft my face is!

Here’s a WOW! recipe I found in a paleo magazine … it was so delicious it blew me away! I will make this salad every day until I get sick of it, it was perfect and has everything you need: healthy protein, healthy fats, greens, etc.

It serves four, but if you have a fast metabolism like I do, you can definitely polish off all four servings in one sitting.

Avocado Kale Slaw

Ingredients (I used all organic)

6 cups chopped kale (of course remove stems)

1 cup shredded carrots

1/2 cup finely chopped red onion

1/4 cup roasted sunflower seeds

1/2 medium ripe avocado

1/4 cup coconut milk and 1/4 cup water

2 Tbsp fresh lemon juice

2 Tbsp raw honey (or use agave if you want this to be a VEGAN salad)

1 Tbsp apple cider vinegar (I use Bragg’s with “the mother”)

1 Tbsp extra-virgin olive oil (I used cold-pressed)

1 Tsp Dijon mustard

1/2 Tsp. garlic powder

Sea salt and black pepper to taste (which I didn’t even use because it was sooooo delicious and flavorful without!)

Combine the kale, carrots, onion and sunflower seeds in a large bowl.

Scoop the avocado flesh into a blender or food processor. Add the coconut milk, water, lemon juice, honey, vinegar, olive oil, mustard and garlic powder. Blend until creamy and smooth. Pour the dressing over the salad and toss to coat. Season with salt and pepper before serving.
