My own mango creation:

Chopped mango, papaya, peanuts with a drizzle of vegan vanilla yogurt

Happy National Mango Day!

Mangos were a favorite fruit since I was a child, spending summers with my sister and grandparents in Hollywood, Florida, where my great-grandfather lived–and had a mango tree! Every night he’d meticulously peel and chop up fresh mangos for the family. I was instantly hooked.

Then, it gets better ….

In grade school I had a friend from Puerto Rico. I was over her house and she asked if I liked mangos. YES! She offered me one, as she bit into hers — skin and all! I did not know you could eat the skin.

From that day on, I’d eat the entire mango too. The skin is indeed edible and packed with nutrients and vitamins. And delicious and hearty, I might add.
